in 1976, everitt and stanley developed solar dryer to avert open sun drying conflicts and supply a progressed way to dry products [1]. the solar dryer consisted of a box shape housing unit with a transparent sunlight cover. after decades, numerous distinguished researchers conducted developments on solar dryer to maintain the optimum eligible drying features [2]. in addition to being more energy efficient, solar dryers require less time to achieve optimal drying and occupy less area than would be needed by traditional open-air procedures, thus meaning that the overall process of solar drying is economically favourable and more efficient than the traditional alternative[3]. comparably, modern drying systemsare carried out under controlled conditions which could supply products with better quality. however, these systems are often not only expensive but also highly energy intensive [4]. meanwhile, present global food demand brings about increasing use of fossil fuels in all stages of food chain . statistics indicate that by 2030 global demands for energy and food are expected to be increased by 40% and 50% [5].

The objective of drying the agricultural produces is to increase their shelf life by inhibiting the growth of microorganisms. Removal of water leaves a product reduced in weight and often in bulk.
This reduces the costs and makes the food supply more convenient and more economical. Dried foods can be used for bulk shipping and storage, as well as for special expedition type. The objective of this proposal is to evaluate the performance of the integrated drying system for hybrid solar dryer suitable for drying peach slices in the food processing sector for compared to natural sun drying. In addition, this proposal will be used to find out the suitable drying kinetics of peach slices and determine the parameters of the best suitable models for this fruit.

One of the most important potential applications of solar energy is the solar drying of agricultural products. Losses of fruits and vegetables during their drying in developing countries are estimated to be 30–40% of production. The post harvest losses of agricultural products in the rural areas of the developing countries can be reduced drastically by using well-designed drying systems. Among the different dryers, Ultrasonic dryer has been demonstrate to be superior in the speed and quality of drying the peach slices. Since the ultrasonic heater is the most important component of the indirect air drying system, improvement of the ultrasonic air heater would lead to better performance of the drying system. Therefore; more studies to investigate and improve the thermal performance of double pass flat, v-corrugated and finned plate air heaters is still of considerable interest. However, the phase change materials should be investigated in view of their chemical stability and compatibility with the containing materials before their integration within the drying system. Furthermore, before using the drying systems on large scale, computer simulation models must be performed to simulate the short and long terms performance of the drying systems with and without the storage media to estimate the solar drying curves of the dried peach slices and investigate the cost benefits of the solar drying in this slices.
