research purpose:

as china becomes more and more influential and decisive in the world,chinese culture naturally draws more attention as well, of which chinese cuisine is the most representative aspect, admired and studied by people from other countries.english translations of some dish names,especially those of the northern ones, such as shan dong, northeastern and beijing cuisine, remain unsatisfying and sometimes incapable in conveying the cultural value behind them while being informative and precise at the same time, though some researches concerning this area have already been conducted. this research focus on some deficiencies remaining in the english translation of dish names in shandong, northeastern and beijing cuisine,endeavoring to provide amendments correspondent to them.
